Fried Tofu with Pickled Mustard and Young Soy Beans 

 

I.      Recipe name: Fried Tofu with Pickled Mustard and Young Soy Beans

II.      Ingredients:

  1. 1 package young soy beans*
  2. 4 stems pickled mustard*
  3. 8 ears dried black mushroom*
  4. 2 pieces tofu*
  5. 1 red bell pepper
  6. 1 slice ginger

III.      Seasonings:

  1. ¼ teaspoon salt
  2. 1 teaspoon sugar
  3. 1 teaspoon vegetarian seasoning*
  4. Sesame oil (to taste)

IV.      Starch solution:      1 teaspoon corn starch*, 1 Tablespoon water

V.      Directions:

  1. Wash pickled mustard, soak for 15 minutes, squeeze out the excess water, mince.
  2. Mince soaked dried black mushroom.
  3. Wash young soybeans.
  4. Mince tofu and both red and green bell peppers.
  5. Fry pickled mustard, put on a plate.
  6. Wash and heat the wok, add 2 tbs of oil, fry ginger, add young soybeans, pickled mustard, tofu, dried mushroom, seasonings and some water; cover for a while, add bell peppers.
    Add in the mixture of corn starch and cold water. Add sesame oil.
    * This dish can be served with porridge, vermicelli, noodle, rice and tofu.
