Baby Kelp Soup with Vegetables

I.     Recipe name: Baby Kelp Soup with Vegetables

II.     Ingredients:

  1. 2 Tablespoons baby kelp
  2. 4 tomatoes
  3. ½ head cabbage
  4. ¼ stalk celery
  5. 1 carrot
  6. 2 packages vegetarian chicken stew
  7. A pinch lemon grass

III.     Seasonings:

  1. 1 teaspoon salt
  2. 2 Tablespoons vegetarian seasoning*

IV.     Directions:

  1. Wash the baby kelp to clean, set aside.
  2.  Cut the tomatoes into small cubes.
  3.  Wash the cabbage to clean, cut into thin slices.
  4. Cut the celery into strips in vertical direction first, and then cut those into small cubes.
  5.  Cut the carrot into cubes.
  6. Cut the vegetarian chicken into cubes.
  7. Heat 2 tablespoons cooking oil, sauté tomato, cabbage, celery, carrot, and vegetarian chicken, add in 10 cups water, bring to boil.  And then simmer in low heat for half hour, add in the baby kelp and cook for one minute, add in the seasonings and a pinch of lemongrass.

* Cut cross at the bottom of the tomato, this is optional. Scald the tomato in hot water for 5 minutes, and this makes peeling off the tomato skin easily.
