Fried Monkey Head Mushroom

I.     Recipe name: Fried Monkey Head Mushroom

II.     Ingredients:

  1. 200g monkey head mushroom*
  2. 1 red bell pepper  
  3. 1 green bell pepper
  4. 4 slices pineapple

III.    Starch solution:

  1. 50g cornstarch, 50g self-rising flour
  2. 1 teaspoon salt
  3. 1 teaspoon cooking oil

IV.    Sauce ingredients:

1.     2 Tablespoons tomato sauce

2.     3 Tablespoons vinegar

3.     2 Tablespoons sugar

4.      2 teaspoons cornstarch

5.     4 Tablespoons water

V.     Directions:

  1. Wash the monkey head mushrooms, squeeze out water, cut into small cubes, and marinate with a dash of salt and black pepper.
  2. Remove seeds from the bell peppers and dice.
  3. Mix the monkey head mushrooms with the starch solution, and deep-fry in hot oil until golden brown. Drain.
  4. Stir-fry the bell peppers for a minute, and then add the sauce ingredients until it thickens. Turn off heat, add the pineapple and monkey head mushrooms. Stir well and serve.
