Savory Eggplant Casserole

 

I.     Recipe name: Savory Eggplant Casserole

II.     Ingredients:  

  1. 2 eggplants; a few vegetarian salty fish**; a few fresh shiitake mushrooms*; some young corn, cubed; red and green pepper, julienne cut
  2. A little satay sauce*

III.     Directions:

  1. Heat the cooking oil in a frying pan. Sauté the vegetarian salty fish with satay sauce. Then add in all the remaining ingredients and stir well. Add a pinch of salt and sugar to enhance the flavor. Transfer to a claypot and serve.
